Vegan Donair

Big thanks to vegan donair enthusiasts Glen Budden & Nicole Ingram of Toronto for their recipe!

Ingredients:
  • 1.5 lbs Impossible burger (2 packs)
  • 3 Tbsp Drunken Sailor spice
  • 3 Tbsp water
  • 24 oz sweetened condensed milk (2 cans)
  • 1 tsp garlic powder
  • 1/3 cup white vinegar
  • 2 tbsp avocado oil (Vegetable/canola
  • Thick pita bread

Method:

Loaf

  1. Pre-heat oven to 160 C or 320 F
  2. In a small bowl mix drunken sailor donair spice with water until it is a paste like consistency
  3. In a large bowl add Impossible burger and add donair spice mixture. Mix well with a wooden spoons (or dive right in with your hands) until you can see the colour of the mixture evenly throughout
  4. Transfer the mixture to a food processor with the regular blade and pulse on/off for about 15-30 seconds a few times until the mixture has a pate like texture. This step is crucial or your donair may come out very crumbly
  5. Cut 2 pieces of aluminium foil ~24” long and lay flat on a counter. Transfer mixture from food processor to foil and form a log shape with your hands leaving a good 6” on both ends of the log. Now fold the foil over the log and twist the ends of he foil. Place on a baking sheet and place in the oven for 90 mins
  6. Remove from the oven and place directly in the freezer. Cover with ice or frozen. Leave for a min. of 6 hours preferably overnight, this step will make cutting through the loaf much easier

 Sauce

  1. In a large bowl pour the sweetened condensed milk and mix with a hand mixer on low until an even and smooth consistency Note: when using sweetened condensed milk the top will like be hardened so mixing will smooth out to a similar consistency
  2. Add garlic powder and mix on low for a minute
  3. Very slowly add in the vinegar while mixing on low. The mixture may separate if you add in vinegar too fast, but don’t worry
  4. Transfer the mixture to a high speed blender and blend on high for 1 minute. The consistency should be nice and smooth

Note: Make this the same day as you plan to eat the donair. When storing in the fridge the mixture will solidify. You’ll have to scoop some of the mixture into a bowl and mix it to bring to room temperature. Use caution if you want to warm in the microwave as it will liquify

Donair

Turn on oven to broil

  1. Remove donair loaf from freezer and unwrap. Thinly slice 8-10 slices per donair and place on baking sheet, place in oven
  2. Check donair slices, as soon as they start browning take out of the oven and flip each slice and place back in the oven for ~1min
  3. While your donair loaf is in the oven, heat a frying pan on med-high and add avocado oil
  4. Once the oil hot, dip your pita into some cold water then throw in frying pan and using tongs flip a few times until the pita is golden brown
  5. Place pita on a plate and add 8-10 donair slices. Top with diced tomato and white onion and finally donair sauce.
