Drunken Sailor Bowl
Serves 2-4
What you’ll need:
- Half yellow onion, diced
- Whole red pepper, diced
- 2 garlic cloves, sliced
- 2 cups basmati rice
- 1/4 cup red wine
- Option : 1/4 cup diced fresh cilantro
- Option: 1/3 cup shredded cheddar cheese
- 6 boneless skinless chicken thighs
What to do:
- Preheat Oven : 350
- In a bowl, mix 4 tablespoons of oil and 1/4 cup of Drunken Sailor Spice
- Brush mixture onto each piece of chicken
- In a baking dish add brushed chicken plus 1 cup of water
- Bake for 35 mins (or until chicken is fully cooked)
- Use two forks to shred/pull chicken, place into separate bowl
- In cast iron skillet, heat up 1 tablespoon of oil
- Put in diced onions, garlic, red pepper
- Pour over wine and let simmer for 5 mins
- Cook 2 cups basmati rice
- Combine rice & shredded chicken into skillet with vegetables
- Continue to add Drunken Sailor Donair Spice, to taste
- Add cilantro if desired
- Let simmer for 5 mins on med heat, stir often Place in your favourite bowl and top with a pinch of old cheddar cheese
- Friggin enjoy!
