Drunken Sailor Bowls

Drunken Sailor Bowl
Serves 2-4 

What you’ll need:

  • Half yellow onion, diced
  • Whole red pepper, diced
  • 2 garlic cloves, sliced 
  • 2 cups basmati rice 
  • 1/4 cup red wine
  • Option : 1/4 cup diced fresh cilantro 
  • Option: 1/3 cup shredded cheddar cheese 
  • 6 boneless skinless chicken thighs 

What to do:

  • Preheat Oven : 350
  • In a bowl, mix 4 tablespoons of oil and 1/4 cup of Drunken Sailor Spice
  • Brush mixture onto each piece of chicken
  • In a baking dish add brushed chicken plus 1 cup of water
  • Bake for 35 mins (or until chicken is fully cooked)
  • Use two forks to shred/pull chicken, place into separate bowl
  • In cast iron skillet, heat up 1 tablespoon of oil
  • Put in diced onions, garlic, red pepper
  • Pour over wine and let simmer for 5 mins
  • Cook 2 cups basmati rice
  • Combine rice & shredded chicken into skillet with vegetables
  • Continue to add Drunken Sailor Donair Spice, to taste
  • Add cilantro if desired
  • Let simmer for 5 mins on med heat, stir often Place in your favourite bowl and top with a pinch of old cheddar cheese
